Honestly, Sunrise probably needed a break from Gintoki's shenanigans! But seriously, they wanted to give the series a proper, meaningful ending based on the manga.

Gintama ended because the manga it was based on came to a conclusion, so they wrapped up the anime to stay true to the source material.

As a long-time fan, I believe the creators ended it to leave a lasting impression and avoid jumping the shark. Also, the finale tied up all loose ends beautifully.
