Because some scenes are a bit too spicy for TV, so they save the good stuff for Blu-ray releases.
They started censoring to make the show more suitable for a wider audience and comply with broadcast regulations. Plus, keeps us guessing for those uncensored Blu-rays!
To be honest, it's really all about marketing. They want you to buy the DVDs or Blu-rays for the full experience.
