Studio Sunrise didn't quit, they just finished the story! The series wrapped up with 'Gintama: The Final' movie, which concluded Gintoki’s saga. All good things must come to an end, right?

It's not that Sunrise 'quit' making Gintama; they completed the storyline. Gintama wrapped up with a series of movies that concluded the storyline in a satisfying way.
