Honestly, Suigetsu probably stayed with Orochimaru because he didn't have a better option and it's a pretty wild ride.
Suigetsu is with Orochimaru because he enjoys the scientific experiments and the opportunities to become stronger. Simple as that!
Suigetsu stayed with Orochimaru in Boruto because he still finds it beneficial to train under someone as powerful and resourceful as Orochimaru. Plus, where else would he get access to all those cool experiments and jutsus?
