They changed Tokyo Ghoul because the anime needed to fit a lot of the manga's complex plotlines into a limited number of episodes. It led to certain parts being altered or even skipped. Kinda like trying to fit a dragon into a shoebox!

I've read the manga and watched the anime. The changes in the anime were likely driven by time constraints and the need to make it more visually dynamic.
