Attack on Titan ended because the story reached its natural conclusion. They wanted to give it a fitting and satisfying end rather than dragging it out forever!
It concluded because it's better to end on a high note with a memorable story. No one likes it when a show overstays its welcome.
Honestly, it was time. The plot was getting wild, and any more twists might have given us whiplash!
