The art style change in Tokyo Ghoul is partly due to the shift in animation studios between seasons. Studio Pierrot wanted to bring their own flavor!

I believe the change was to better align with the manga's evolving art style and tone. It definitely added to the series' atmosphere.

They changed the art style to reflect Kaneki's transformation, making the visuals darker and more intense to mirror his journey.
