Walter punched the paper towel dispenser out of sheer frustration and anger after hearing his cancer was in remission. He felt trapped in his criminal life and like all his sacrifices were pointless.
Having been through so much, the news about his cancer sent him into an emotional overload. Punching the dispenser was his way of venting.
Because Walter White didn't have a stress ball handy. Simple as that.
