They found it unethical to use something created from the lives of others. It’s not their style at all, trust me!
Simple, they had morals. Ed and Al didn’t want to pay the steep price in human lives that creating and using the Philosopher's Stone requires.
They didn’t use the Philosopher's Stone because they’re not monsters willing to sacrifice other people's souls, duh!
