Attack on Titan ends because that's the natural progression for any story. It was planned to have an ending to wrap up its intricate plot and character arcs.
From my perspective, it was to ensure the story stayed strong without dragging on. Better to end on a high note!
Shows end. That's just how it is. Attack on Titan is no exception.
