Antivirus software can sometimes see GTA V as a false positive and block it, causing crashes. Temporarily disable your antivirus and see if that helps. But remember to turn it back on after!

Honestly, it's prob just a bug. Try verifying the game files if you're on Steam. Fixed it for me last time.
