Honestly, just restart your Xbox and check your internet. GTA 5 is huge and needs a stable connection. If that doesn't work, it's probably haunted. Jk, but seriously, restart.
Had this issue last week. Cleaned up some space on my Xbox and restarted the installation. Worked like a charm. Make sure ya got enough space for the beast that is GTA 5.
