Why Does SteamVR Open When I Launch Subnautica?

This happens because Subnautica has VR support. You can stop SteamVR from launching by right-clicking Subnautica in your library, selecting Properties, and unchecking the 'Use Desktop Game Theatre while SteamVR is active' box.

Just disable VR in the game properties. Easy peasy!

Happened to me too! Just untick that VR theater mode in the properties and you should be good to go.
