GT's non-canon status stems from it being an original anime sequel without a manga counterpart. Toriyama had minimal input.
From my experience, GT diverges too much from the original content and lacks Toriyama's signature touch, so it's sidelined as non-canon.
Let's be real, fans just see GT as the oddball of the Dragon Ball family because it wasn't based on Toriyama's manga.
