Because Koro-sensei is the best teacher ever and losing him is like losing a piece of your soul. Simple as that.
It hits hard because you really see how much the students and Koro-sensei care for each other, and it's like losing a mentor and friend. There's no way to get through it without tissues!
Trust me, as someone who has watched the ending multiple times, the emotional investment in the characters makes the finale so bittersweet. The mixture of joy and sorrow is just too real.
