It's mostly because different studios and animation teams have worked on Boruto compared to Naruto. Plus, animation techniques have evolved since the original series.
I've noticed this too! Since Boruto came out years after Naruto, technology has changed and so has the animation style. Feels like watching a modern version of an old favorite!
