It鈥檚 mostly because some episodes were rushed to meet tight deadlines, leading to lower-quality animation. Not every episode is bad, but the early ones definitely had some rough spots!

From my experience, the animation quality improved in later episodes and during critical fight scenes. The Goku vs. Jiren fight? Pure gold!
