Dragon Ball Z Kai is basically Dragon Ball Z on a diet – trimmed the filler fat, kept the action muscles. 'Kai' in Japanese can mean 'revision' or 'modification'.

It's called Dragon Ball Z Kai because it's a remastered version of Dragon Ball Z, with less filler and closer to the manga. They wanted to give it a fresh start so they added 'Kai', which means 'updated'.
