It happened to me once, and I had to restart my Switch to get the download going again. Worth a try!
Sometimes, Nintendo's servers are just having a moment. Give it a bit, and it should pick back up soon.
Make sure you have enough storage space. Low storage can cause the download to pause.
Your download probably paused because your Switch is in sleep mode. Wake it up, and it should resume!
