Because 'The Legend of Link' just doesn't have the same ring to it.
The game is named after Princess Zelda, who's central to the plot. Link's always on a quest to rescue her, so it's her legend!
Miyamoto always envisioned Zelda as the mystical and timeless character around whom the legends revolve, justifying the title!
