It's mainly due to Togashi's health problems. He has severe chronic back pain, which makes it tough to keep a regular schedule. So, it's more of a 'pause' than a 'cancellation.'

Hunter x Hunter wasn't really canceled per se, it just keeps going on long hiatuses because Yoshihiro Togashi, the creator, has health issues that prevent him from working consistently. The manga and anime will likely return whenever he's feeling better!
