The Shitaki Mushroom was never actually in Super Mario Maker. You might be thinking of the Super Mushroom or another power-up!

Nintendo probably never added the Shitaki Mushroom because 'Shitaki' sounds too similar to a certain four-letter word. Keepin' it family-friendly!

As someone who's been playing since release, I can confirm there was no Shitaki Mushroom in the game. Maybe you meant another game?

Hot take: It was never removed because it was never there. Simple as that.
