You should also try right-clicking the taskbar, select Taskbar settings, and toggle 'Automatically hide the taskbar in desktop mode'.

Try setting Subnautica to 'Fullscreen' mode in the settings. That usually removes the taskbar!
Press F11. Worked for me!
It's probably an issue with Windows, not the game. Try restarting your computer.
