Why won't Steam open on my Mac?

First thing, make sure your Mac is up-to-date with the latest macOS version. Sometimes, Steam won't play nice with older versions. Also, check if Steam needs an update or a fresh install. It's like telling it to wake up and smell the coffee.

I've been there, mate. Had to completely uninstall Steam and then reinstall it. Pain in the neck, but it worked like a charm afterwards. Before you do that, try verifying the integrity of game files if it's just specific games acting up.
