Short answer: No. Steam Deck won't download while sleeping.

Unfortunately, the Steam Deck pauses downloads when it goes into sleep mode. Keep it powered on to finish your downloads.

From my experience, the Steam Deck doesn't keep things downloading in sleep mode. I always have to leave it on!
