Just watch the G-8 arc and skip the rest. Most fillers don't add anything to the main storyline, but G-8 is the exception that proves the rule. It's almost like the creators took extra care to make it blend seamlessly with the canonical content.

Definitely don't skip the G-8 arc (episodes 196-206). It's widely considered as one of the best filler arcs in any anime, not just One Piece. The humor, storytelling, and character interactions are on point, making it feel like a natural part of the series. Another one to look out for is the 'Post-Alabasta' Arc (episodes 131-135); it gives a nice breather with some character development moments after the grand Alabasta saga.

Honestly, skip all the fillers. One Piece is long enough with its main story arcs. You're not missing much by jumping over the filler episodes, and it'll save you a ton of time.

Ocean's Dream Arc (episodes 220-224) is underrated! It has a unique premise with the crew losing their memories, which leads to some interesting dynamics and interactions. Also, the Foxy's Return arc (episodes 225-226) is quite fun if you enjoyed the Davy Back Fight earlier in the storyline.
