One Piece's animation quality sees a notable improvement starting from episode 207, which is the beginning of the Water 7 arc. You'll notice the animation becomes smoother and the character designs get sharper. The visuals continue to improve, especially during major arcs like Marineford and onwards. They really stepped up their game in the recent Wano arc, with the animation quality and battle scenes being absolutely top-notch!

Honestly, the quality starts getting better around the Water 7 arc (episode 207), but if you're looking for a MASSIVE upgrade, wait till you hit the Wano arc. The animation quality there is just chef's kiss.

I actually think One Piece's charm is in its original animation style. Sure, it gets sharper and more visually appealing as it goes, especially post-episode 207, but the early episodes have their own magic.
