You can catch Eevee in Pokemon Violet in the South Province (Area Three), just keep an eye out while you're exploring the area. Eevee can actually be found in multiple locations, but South Province (Area Three) is your best bet. Remember, weather conditions in Pokemon Scarlet and Violet can affect which Pokémon appear, so if you're having no luck, try coming back at a different time or day.
