Honestly, just keep your eyes peeled in North Province (Area Two). I snagged mine near a graveyard. It wasn't easy, but patience pays off!

Not to burst the Mimikyu catching bubble, but I think spending hours looking for one specific Pokémon kinda misses the point of the game. There's so much to explore and do in Paldea. Maybe just enjoy the journey, and you'll run into a Mimikyu when you least expect it!
