Umbreon isn't something you'd 'find' in the wild in Pokémon Scarlet or Violet. To get yourself an Umbreon, you need to evolve an Eevee with high friendship during the night. Make sure you're doing this in the game's nighttime, not real life, lol. You can increase Eevee's friendship by battling together, using items on it, and playing with it in Picnics. Just be patient, and soon you'll have that cool, moonlight-loving dark type!
