Yup, you totally can change your character's appearance in Stardew Valley but it comes a bit later in the game. You gotta befriend a certain wizard, and he'll let you change your appearance for a small fee of in-game currency. So, don't worry if you're having second thoughts about your character's hairstyle or color!

Short answer: Yes, after some progress. Long answer: After unlocking the Wizard's tower, the Wizard offers you a shrine that lets you change your appearance. It's like a magic makeover!
