Nah, solo players are good to go without it. Multiplayer needs it though. Tbh, farming alone is pretty zen.

Stardew Valley doesn't demand Nintendo Online for single-player, but trust me, the multiplayer aspect is where it's at. Totally worth the subscription if you've got friends to join in.

Definitely not for single-player. Stardew Valley's main game is a solo adventure that doesn't require any online service. But, if multiplayer is what you're after, then you'll need Nintendo Online.
