Nope, you can't plant fruit trees in the winter. They need to be planted in any other season so they have time to grow before they start producing fruit. But once they're fully grown, they'll produce fruit all year round, including winter!
Nah, save your seeds for spring. Winter's for mining and fishing, not farming!
