Actually tried this with my friends thinking we could all farm together on one screen. Turns out, you definitely need separate Switches for each player. A bit of a bummer, but it makes sense with how the game is set up.
Nope, if you wanna play Stardew Valley in multiplayer mode on the Switch, each player needs their own console and a copy of the game. Stardew Valley doesn't support split-screen on the Switch, so couch co-op isn't an option here. Time to get everyone their own Switch!
