I actually caught my first Walleye during a stormy Fall afternoon by the mountain lake. It was pretty late, around 8 PM. The key is definitely fishing when it's raining. Rain seems to be their favorite weather!

To catch a Walleye in Stardew Valley, you gotta check the weather and the calendar. Walleye only bites when it's raining! So, wait for a rainy day in Fall (or Winter if you have the Rain Totem). Then, head over to rivers, the lake, or the Forest Pond between 12 PM and 2 AM. Be patient; fishing requires precision!
