You gotta defeat the boss 'The Elder' and get the Swamp Key. Then find Iron in the Swamp biome. Once you've got Iron, you can craft a Stonecutter at the forge. Enjoy your sturdy stone fortresses!

Beat The Elder to get the Swamp Key, then mine Iron in the Swamps. Use the Iron to make a Stonecutter. Voila, stone building unlocked!
