Stardew Valley doesn't have a finite end, really. It's designed for you to live out your farming fantasy for as long or as short as you wish. Technically, you could say there's a sort of 'completion' point when you've achieved all the main goals you're interested in, but even then, you can keep playing. Many players are hundreds of hours in and still find new things to enjoy!
Forever, if your heart desires. Stardew Valley is less of a game you 'beat' and more of a world you live in. You can keep farming, mining, fishing, and building relationships indefinitely. I've clocked over 300 hours and still find joy in my daily routine on my farm.
Honestly, after you've done everything, it kinda feels the same. But that takes a LONG time, so don't worry about running out of stuff to do too soon.
