The tapper in Stardew Valley takes varying amounts of time to produce goods, depending on the tree you attach it to. For Pine, Oak, and Maple trees, you're looking at about 7 to 8 in-game days. If you're eyeing that sweet, sweet syrup from a Maple tree, give it a week or so!

It really depends on the tree, but generally, you're waiting around a week. Patience is a virtue, especially if you're gunning for that Maple Syrup!
