To change the Discord mobile layout back, go to User Settings > Appearance, and switch between 'Cozy' and 'Compact' modes. Easy peasy!

If you want the old layout, unfortunately, Discord doesn't provide a direct option to revert back to older versions. You might need to get used to the new changes.
