Honestly, it's super simple. Main menu, top of the screen, click the name field, type the new name. Voilà!
From personal experience, just click on your old name at the top of the main screen, type in the new one and hit enter. You've got a new identity in seconds!
In the Among Us main menu, look for the name field at the top of the screen. Click it, delete your old name, and type in a new one. Boom! You're done.
