You can change it directly in the server's configuration file. Open the 'start_headless_server.bat' file with a text editor, and look for the line that starts with 'valheim_server -nographics -batchmode' followed by the '-password' argument. Replace the old password with the new one, save the file, and restart the server.
Done it myself plenty of times! Just hop into the 'start_headless_server.bat' file, change the password there, save, and restart. Easy peasy!
Honestly, it's as simple as changing the password in the server settings and restarting. No big deal!
