You need to unlock the 'Jukebox' mode first. From there, you can swap the music tracks for stages. It's pretty cool, actually!

Why bother changing the music? The default tracks are already fire!

Just use the Jukebox feature. It's in the main menu, and you can set the music for each stage easily.
