Actually, you CAN change your character's appearance. Visit the Wizard's tower after getting friendly with him. The Shrine of Illusions lets you change up your look for a fee. Totally worth it if you ask me, it's like a whole new game afterwards!
FYI, you can't change your name or farm name, just your appearance and clothes at the Wizard's place. Don't get your hopes up for a full identity overhaul.
To change your character's appearance in Stardew Valley, hit up the Wizard's Tower once you've got at least four hearts of friendship with the Wizard. He'll give you access to his basement, where you can use the Shrine of Illusions for 500g. It's a small price to pay for a full makeover!
