To turn off Quick Chat in Among Us, you need to change your account settings to be registered as 18 years or older. Go to account settings and change your birthdate. Have fun chatting freely!

I just changed my age to 18+ in the settings, and it worked like a charm!

Just change your date of birth in the game to 18+ and you'll get back full chat control.
