Use characters with strong anti-air moves to counter Akuma's aerial attacks. Keep him grounded, and you'll have a better chance.
I'd say learn his patterns, bait out the Shoryuken, and deliver a hard-hitting combo. It's all about patience and precision.
I struggled a lot too, but once I mastered my character's movement and kept my distance to avoid his projectiles, I saw a huge improvement!
Just spam low attacks. He hates those.
