Honestly, just dig everywhere. I got tons by preparing my field for crops. It's kinda random, but more soil you turn, more clay you get. Rainy days are your best friend for clay hunting.

Dig during rain, especially in the first year when you're setting up. Also, worm tiles are lowkey the best. But, if you're not into random luck, maybe focus on other resources; clay's kinda everywhere but nowhere specific.
