To get diamonds in Stardew Valley, you really just gotta keep mining. The deeper, the better. Get past level 80 in the Mines, and you're in diamond territory.

Actually, just get yourself a Crystalarium. Stick a diamond in there and bam, unlimited diamonds. No need to sweat in the mines!
