Red mushrooms pop up in a few places, but your best bet is the Secret Woods and the mines. The Secret Woods have a chance to spawn them daily, and in the mines, you can find them starting around level 15. Don't forget to check, cause these shrooms are a hot commodity for certain quests and recipes!

just buy them from the traveling cart lol, they show up there pretty often and you can get them without all the extra work.

Plant them. Get a red mushroom spore from the mines and plant it in the mushroom cave or on your farm if you've unlocked that skill. Patience is key, but it's a reliable source.
