Go to your save files in the Valheim folder (usually under C:\Users\[YourUsername]\AppData\LocalLow\IronGate\Valheim\worlds) and find the .fwl file, then use a world viewer tool to extract the seed.

If you have access to the server configuration files, open valheim_server.exe.config and look for the 'Seed' variable. Easy peasy!
