Just change the resolution in the game settings. If that doesn't work, messing with your PC's display settings might do the trick. Stardew Valley's pretty flexible.
Had the same issue! Easy fix: Go to the game's menu, then click on 'options'. There you'll find the resolution settings. Just pick the one that matches your screen's resolution. If you're on PC, sometimes running the game in windowed mode and then switching back to fullscreen helps it adjust better!
